What are texturizers?

Texturizers are food additives added to food products to increase the stability of the product, while improving the texture of the product. Food texturizers can come from many sources, some of the more common being plants, animals, and sea weed. Since water is such an important ingredient in a formula, the way you structure it will be critical to your product design, both in terms of function and sensorial properties.

What does a texturizer do?

What texturizers do in foods is help maintain a uniform texture or consistency. These are substances commonly known as binders. Examples are gelatine and carrageenan. When it comes to reducing sugar or fat content, these ingredients are useful for adding texture and richness to low-fat foods and products. In many cases, product developers will use soy protein as a texturizer, but other vegetable proteins are also used.

What are starches?

Starches are complex carbohydrates and a natural component of most plants, including fruits, vegetables, and grains. Most plants store energy in the form of starches, including fruits and vegetables. Carbohydrates are an essential part of a balanced diet, as they provide energy, fiber, and a feeling of fullness. The body breaks down starch molecules into glucose, which is the body’s main source of fuel.

What is the function of starch?

Starchy foods — such as potatoes, bread, rice, pasta and cereals — should make up just over a third of the food you eat, as the Eatwell guidelines suggest. Starch is a carbohydrate and a natural component of most plants, including fruits, vegetables, and grains. The function of eating more starchy foods is recommended as part of a balanced diet to provide energy and fibre, as well as increase feelings of fullness. Enrich your food products with starch-based nutritional ingredients.
