Our fermented preservative, NuXtend prevents mold with a clean label and the same functionality and taste as synthetic preservatives.
NuXtend is produced via a consistent and tightly controlled process, resulting in a propionic acid content that is constantly between 35 and 45%. To our knowledge other fermented wheat flours in the market do have a considerably lower propionic acid content (max 30%) and are not very consistent in their propionic acid content. This means that in order to have a constant protection level the dosages used in formulations are significantly higher compared to NuXtend. Meaning a dosage of 0,7-0,8% of NuXtend 110 on flour basis constantly delivers the same amount of propionic acid as 0,3% calcium propionate whilst with other fermented wheat flours a minimum of 1% dosages is required and even then full protection is not guaranteed.
