The syrup is produced through the hydrolysis of inulin stored in the agave heart, resulting in a fructose-rich syrup (≥84%) that is approximately 1.5 times sweeter than table sugar. It has a low glycaemic index of 17.1 and antioxidant properties making it suitable for healthy formulations.
Organic 100% Blue Agave Syrup naturally accentuates and helps enhance food flavours providing texture, consistency, wettability and sweetness without modifying its sensory properties. With high water solubility, this agave syrup integrates into a wide range of products, including beverages (coffee, tea, fruit juices), dairy items (milk, smoothies, yoghurt, ice cream), bakery goods (bread, cakes, cookies, cereal bars), and condiments (salads, dressings, vinaigrettes, sauces, marinades). It serves as an excellent replacement for table sugar, honey, corn syrup, or maple syrup, enhancing flavour and providing desirable texture and consistency without altering sensory properties.
Technical specifications of blue agave syrup
The syrup maintains a pH range of 4.0 to 6.0 and contains 74–76° Brix, ensuring product stability. It is essential to store the product in a cool, dry place, protected from light, to preserve its quality. The shelf life is three years when unopened and properly stored.
