IMAG Organics’ 100% Blue Agave Crystallised Syrup is a natural sweetener derived exclusively from the Agave tequilana Weber Blue variety. This beige to slightly yellow crystalline product offers a pleasantly sweet flavour characteristic of agave, making it a versatile ingredient for various food and beverage applications.
The crystallised syrup is produced by hydrolysing inulin stored in the agave heart, resulting in a fructose-rich composition (≥98%) that is approximately 1.4 times sweeter than table sugar. With a low glycaemic index of 17.1 and antioxidant capacity it serves as a suitable alternative for health-conscious formulations.

It can effectively replace table sugar, honey, corn syrup, or maple syrup.

The product maintains a pH range of 4.0 to 6.0 and has a maximum moisture content of 5%, ensuring stability in various formulations. It is essential to store the crystallised syrup in a cool, dry place, protected from light and moisture, as it is hygroscopic. The shelf life is two years when unopened and properly stored.
