Van Houten – medium Brown Cocoa Powder (10-12% cocoa butter) is Original Dutch Processed Cocoa
invented by Van Houten in 1846. It is an ideal ingredient for flavouring, colouring of many bakery products like Macarons, gelato, sorbet, cookies, baked meringue, mousses, cakes, brownies, muffins and beverages like sorbet, glazings & sauces, hot drinks etc. It gives very smooth mouth-feel with a slight hint of bitterness and deep cocoa aroma.
Cocoa is the essential ingredient for chocolate. The source of all things chocolate, cocoa “beans” are actually seeds from the fruit of Theobroma cacao. Approximately 20 to 40 seeds cluster inside football-shaped pods and are covered by sweet white fruit pulp. It was brought to us by the Spanish explorers Columbus and Cortés who learned about it from their encounters in the “New World.” The cocoa tree, which comes originally from the tropical rain forests of Honduras, Venezuela and Mexico, was soon cultivated in plantations set up by the Spanish. Nowadays, cocoa is grown in a narrow belt around the equator in the Americas, Africa and Asia.
Cocoa is rich in flavanols that help to protect the heart. Flavanols have been shown to support the production of nitric oxide (NO) in the endothelium (the inner cell lining of blood vessels) that helps to relax the blood vessels and improve blood flow, thereby lowering blood pressure. Flavanols in chocolate can increase insulin sensitivity in short term studies; in the long run this could reduce risk of diabetes.
